Hachioji Ramen is a popular local ramen that Hachioji City, Tokyo is proud of. It is a light and gentle ramen based on soy sauce, and it uses chopped onions as ingredients and fat floats on the surface of the soup. Although it is made simple, it has been featured in many media, and it has become a local ramen in Tokyo, with many fans from far away as well as local Hachioji! Hachioji ramen has a long history, and more than 60 years ago, in Showa 34 (1959), a certain shop that ran a delicatessen in front of Kitano Station decided to move to Koyasu Town due to relocation due to land readjustment, so I thought it would be difficult to be a delicatessen because it would be difficult to be a delicatessen. At that time, the mainstream ramen shop was a Chinese restaurant that served food delivery, so the restaurant, which specialized in ramen and tried to make a living only by selling it in-store, went through trial and error to create some characteristics. At that time, I happened to come across a ramen shop with "kizami onions" on a trip to Hokkaido. However, although the ramen I ate in Hokkaido had a good texture, the pungency of the onions could not be removed, and as a result of repeated ingenuity, I came up with the oil as a result of my devise to make a soup that somehow removed the pungent taste without spoiling the texture of the onions. The oil suppressed the pungency of the onions and enhanced the sweetness, and the prototype of today's Hachioji ramen was born.

Forgot to include this in my post yesterday so I'm posting it today. When I was walking to Minami-Senju I stopped in for lunch at a place called "Hikari Ramen" (中華そば 光) and enjoyed a really interesting bowl of ramen... I got the special shoyu ramen (特製醬油らーめん) I believe it was, and I think it cost about ~1000 yen but it had some unique characteristics as you can probably tell by the photo. I'm pretty sure out of all the bowls of ramen I've eaten I've never had one with a pink egg. I was surprised at first but just thought it was kind of something funny that gave the ramen shop its own sort of identity. Also, while I have had meatballs in some of the ramen I've eaten before, it's quite rare in my experience (or maybe I'm just not ordering the right ramen lol) so I thought that was kind of interesting as well. The ramen tasted great though, the pink didn't add any extra unique flavor to the egg as far as I could tell but it was all really good. Interestingly enough, the seats downstairs were all taken and one of the people said that they had extra seating upstairs where I was shown into a sort of like storage room with no one else in it lol. It was an interesting experience but it was nice since I got to eat all by myself and I could even see out of the window a bit. All in all it was a good experience and I recommend it if you're in the area! It's really close to Minowabashi Station

Visited Fujiiya a small eatery in Kameido famous for its gyoza. It was definitely good, and they had an interesting tare for the gyoza as well. I think it had chashu inside of it and it tasted great. I threw in a little soy sauce as well but I think it's probably perfect without it. I recommend shaking the bottle before pouring it as I had a little too much oil come out instead of the actual sauce. It was also my first time getting shoyu ramen in a while. I'm usually a bigger fan of miso, probably because it feels warm and filling on cold days but is great on hot days too. That being said, I was pleasantly surprised by this shoyu ramen, was a really refreshing flavor and the noodles were perfect. The restaurant is really cheap too, I think a normal chashu ramen and 5-piece gyoza was just ¥780, which is super cheap. They also had a lot of cool photos and signatures on the wall from/with famous entertainers like "Downtown," etc. Cool place, definitely recommend it!
